Cookies' flavor fit for King

The King's favorite sandwich (peanut butter, banana and bacon) lives on in this cookie.

ELVIS COOKIES

1 cup smooth peanut butter

1/2 cup packed light brown sugar

1/2 cup granulated sugar

1 large egg, lightly beaten

1/4 cup all-purpose flour

1 teaspoon baking soda

1/2 cup crumbled cooked (very crisp) bacon (about 6 strips)

1/2 cup diced firm banana

Heat the oven to 350 degrees. Line two baking sheets with parchment paper.

In large bowl, combine peanut butter, brown sugar and granulated sugar. Use an electric mixer on medium to beat until well combined. Beat in the egg until just combined. Set aside.

In medium bowl, whisk together flour and baking soda. With the mixer on low, add the dry ingredients, scraping down the sides of the bowl as needed.

Gently mix in the bacon and bananas, trying not to mash the bananas. Using slightly wet hands, roll rounded teaspoons of dough into balls and place on baking sheets, leaving 1 inch between them. With fork dipped in water, flatten the cookies until they are about 11/2 inches around.

Bake on middle rack for 11 minutes. Cool on the baking sheet for 2 minutes, then remove with a metal spatula to racks to cool. Makes 30 cookies.
