IN THE KITCHEN

Keep it simple, keep it cool

Use zucchini, yellow squash, red onions, red bell peppers or whatever firm fresh summer vegetable you like to make an easy room-temperature side dish. Just thickly slice the squash and onions and halve and seed the peppers. Oil them lightly and grill them on a hot grill until well-marked on both sides. Then let them marinate on a platter in a little balsamic vinaigrette. This summer salad will be ready whenever you're ready to serve the rest of the meal.

THE WINE: 2001 Alice White Semillon/Chardonnay, Australia $7

THE FLAVORS: An interesting blend; the Chardonnay gives the wine structure while the Semillon adds a lighter sweeter fruity soft component to the wine.

PAIRS WITH: Baked fish topped with lemon or grilled salmon.
