Cooking wild



Summertime offers plenty of action for freshwater panfish such as bluegill and largemouths - or coastal favorites such as flounder, whiting and croakers. This recipe is an easy, fun way to share and enjoy an assorted catch:

FISH BALLS

1 1/2 cups flaked fish

1 1/2 cups mashed potatoes

1/4 tablespoon pepper

1/4 tablespoon salt

1 egg, beaten

1 cup buttermilk pancake mix

Fat or oil for frying

Bake skinless fish fillets in covered glass dish 15 minutes at 400 degrees until fish flakes. Mix flaked fish with potatoes, butter, pepper, salt and egg and form into one-inch balls. Coat with pancake mix and fry in shallow hot fat or oil. Can be served with tartar or cocktail sauce.
