The cereals and fruit in these whole-wheat apple cookies make them a healthful snack to satisfy a sweet tooth. The cookies are very quickly made and call for easy-to-find ingredients.
WHOLE-WHEAT APPLE COOKIES
1/2 cup butter or margarine, melted
1/4 cup sugar
1/2 cup light brown sugar, packed
1 cup uncooked, quick-cooking oats
3/4 cup whole wheat flour
3/4 cup chopped unpeeled apple (1 whole medium-large apple, cored)
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda
Heat oven to 375 degrees. In a large bowl, with mixer at medium speed, beat all ingredients until well mixed, occasionally scraping the bowl.
Drop by teaspoonfuls, 1 inch apart, onto greased cookie sheet. Bake for 10 to 12 minutes or until lightly browned. Immediately remove cookies to wire racks; cool. Makes 36 cookies.
