Hamburger variations are ready for the grill in regional guise

Want a new spin on the traditional hamburger?

The Heinz Consumer Test Kitchens in Pittsburgh cooked up more than 25 city-specific hamburger recipes, incorporating regional eating preferences.

The results include specialties like the Boston Back Bay Burger, decked out with whole cranberry sauce; the Chicago Pizza Burger, incorporating Parmesan cheese and pepperoni; the Phoenix Desert Burger, spiced with chopped chilies and cilantro. You get the idea.

The following is a selection of hamburger city-variation recipes, each making 4 servings:


1 pound ground turkey

1 egg, slightly beaten

2 green onions, sliced

1/4 cup dry bread crumbs

Seasoned salt and pepper

1/4 cup ketchup

1/4 cup whole berry cranberry sauce

Sandwich buns

Leaf lettuce

Mix together ground turkey, egg, onions and bread crumbs; form into four patties. Sprinkle both sides of patties with seasoned salt and pepper. Grill slowly until cooked through. Blend ketchup and cranberry sauce. Serve burgers in buns, topped with lettuce and cranberry-ketchup mixture.


1 pound lean ground beef

1 cup (1/4 pound) chopped pepperoni

1/3 cup grated Parmesan cheese

2 teaspoons pizza seasoning mix

Sandwich buns

Sliced mozzarella cheese

Sliced tomato


Mix together beef, pepperoni, cheese and seasoning mix; form into 4 patties. Grill to desired doneness. Serve burgers in sandwich buns with mozzarella cheese, tomato and ketchup.


1 pound lean ground beef

1 can (4 ounces) chopped chilies

2 tablespoons chopped fresh cilantro

1/2 teaspoon onion salt

Sandwich buns

Sliced avocado

Sliced tomato


Mix together ground beef, chilies, cilantro and onion salt; form into 4 patties. Grill to desired doneness. Serve burgers on sandwich buns with avocado, tomato and ketchup.


1 pound lean ground beef

1/3 cup chopped pecans

2 sliced green onions

1/4 cup ketchup

1/4 cup peach preserves

1 tablespoon chopped jalapeno pepper

Sandwich buns


Mix together ground beef, pecans and green onions; form into 4 patties. Grill to desired doneness. Blend ketchup, preserves and jalapeno pepper. Serve burgers in bun with lettuce and ketchup-peach-preserves mixture.
