You probably recall the commercial in which they state that, “A sandwich is a sandwich…” but packing a sandwich for lunch at the office doesn’t have to be dull and boring. Just take a look in the deli case and you’ll find unusual ingredients that can take your sandwich-making to the next level.
This week’s recipe for Roast Beef Sandwiches with Horseradish Slaw is a good example of this theory. Standard deli roast beef is paired with a zesty slaw and layered with an unusual deli counter ingredient – horseradish cheddar, which gives the sandwich a little extra kick. (Boar’s Head horseradish cheddar was used when testing the recipe.)
When preparing the sandwiches for an at-work lunch, just pack the slaw separately to add to the sandwich just before serving.
ROAST BEEF SANDWICH WITH HORSERADISH SLAW
3 tablespoons honey-Dijon mustard
3 tablespoons reduced-fat mayonnaise
1-2 teaspoons prepared horseradish
Salt and freshly ground black pepper, to taste
1 cup shredded cabbage
8 slices hearty whole-grain bread
12 slices deli roast beef (3 slices per sandwich)
4 slices deli horseradish cheddar cheese (1 slice per sandwich)
Combine the honey-Dijon mustard, mayonnaise and horseradish in a small bowl. Season to taste with salt and pepper. Spread a little of the mixture on four pieces of the bread and then add the shredded cabbage to the remaining mixture, stirring to coat completely.
Divide the roast beef among the slices of bread that were spread with the mustard mixture. Top with the cheese slices and then divide the slaw over the top. Top with the remaining slices of bread and cut in half.
Makes 4 sandwiches.
